Smoked a Fresh Ham for New Years Day Dinner. It came out fantastic. I didn't think anything could beat smoked Pork Butt, but the fresh ham was spectacular. I didn't try to turn it into a ham by curing it or using a lot of spices. Just smoked it with some salt and pepper rubbed on the outside. Didn't smoke it to as high a temperature as pork butt so that I could slice instead of pull it. The maple gave the sliced meat a really nice flavor.

The smell of the maple smoke was a really nice change from the Hickory / Mesquite I usually use. Kind of a sweet smell. Almost like there was a sugar house in the backyard.

Obviously I have a Bradley Smoker and use several of their biscuits for a variety of meats. I use pecan almost exclusively for Pork Shoulder. I use apple for chicken, turkey, and ribs, Jim Beam Oak for beef, and alder for fish. However, I'm seriously considering Pecan for everything going forward. I have had my Bradley smoker for a little less than a year now and everything I have cooked on it has turned out delicious. I purchased the Apple bisquettes to smoke some Pork loins to take to the lake and as always it turned out amazing. The Apple went perfectly with the Pork since it has a lighter flavor and isn't as overpowering as mesquite would have been. Along with smoking the Pork I smoked a Deer roast as well and even it turned out great with the Apple.

The 120 packs of the bisquettes is definitely the way to go as they are much cheaper when purchasing them in the bulk packs and a ton cheaper than trying to buy them at any of the local stores. I would gladly recommend the Apple bisquettes and the Bradly smoker to anybody that is looking for a smoker that is easy to use and puts out a great final product.
